Paleo Recipe

Tasty Business- sweet curry chicken thighs with mashed yams and swiss chard- If you are looking for a tasty lunch or dinner which is inline with the paleo style of eating and keeps inline with the my MS diet (outlined on the diet page), give this recipe a try. I made this for my wife and I for lunch for lunch on Tuesday an it is some tasty business.

Ingredients

  • Antibiotic and hormone free chicken thighs (boneless if possible) (roughly twelve pieces)
  • 3 chopped locally made (from a butcher) gluten free sausages
  • 1 large bunch of swiss chard, chopped (keep stems and chop too)
  • 1/4 of a large white onion, diced
  • 1 cup of chopped mushrooms
  • 1 orange/red/yellow/green pepper, diced
  • 2 average sized yams, skinned and rough chopped
  • 3 teaspoons of curry powder
  • 2 teaspoons of turmeric powder
  • 2 teaspoons of ginger
  • 1 teaspoon of black pepper
  • 3 tablespoons of real maple syrup (if maple syrup isn’t available, use real/natural honey)
  • 1/2 cup of un-sweetend almond or coconut milk

 

Method

  • Steam swiss chard and yams 
  • With a low/medium heat, pre-heat a large pan (cast iron or stainless steel if possible) with a table spoon of coconut oil
  • In pan, place the onions, peppers, mushrooms, chopped sausage, and chicken thighs
  • Add spices, almond milk, and maple syrup to chicken
  • Stir mixture thoroughly ensuring that all ingredients are mixed evenly
  • Cook for 30-45 minutes or until chicken is completely cooked
  • Once yams are soft, place in a bowl and mash. Add almond milk as needed
  • Place a roughly 3 inch across circle of mashed yams on a plate. Surround one side of circle with a generous portion of swiss chard
  • On top of yams, placed two or three chicken thighs. Scoop through pan and top thighs with peppers, onions, mushrooms, and sausage pieces.
  • Serve and enjoy
