Paleo Recipes


Paleo Recipes- For anyone who may be wondering about the diet listed on this website I have listed a few recipes you can try.

Coconut Flour Pancakes


5 eggs (free range if possible)
1 cup of applesauce (sugar free)
½ cup coconut flour
1 tsp baking soda
Cinnamon to taste
¼ cup coconut oil
1 tsp vanilla
2 T honey or maple syrup


Heat large skillet or pancake griddle. Mix all ingredients except any add-ins with blender, whisk or immersion blender and let sit 5 minutes to thicken. Add berries, bananas, or other add-ins and mix by hand Grease griddle or skillet with coconut oil. Use a ¼ cup measure to spoon pancakes onto cooking surface. Cook approximately 2-3 minutes per side until it bubbles and is easy to flip.

Curried Chicken Thighs

3 Cups Almond Milk
4 Table Spoons Maple Syrup (or honey)
2 Table Spoons Coconut Oil
2 Table Spoons Curry Powder
1 Table Spoon Tumeric
1 Teaspoon Black Pepper
1/2 Teaspoon Salt
1 package 1-1.5 kg of free range chicken thighs (boneless if possible)

In large pot bring to simmer and cook for 1 hour. Serve on minced cauliflower ‘rice’. Check chicken to ensure it is cooked (using temp gauge is preferable).

Coconut Bread

6 eggs
1 tablespoon honey
1/2 coconut oil
3/4 cups coconut flour
1 teaspoon baking soda
1/2 cup of blended butternut squash or butternut squash soup


Step 1
Preheat the oven to 350F. Grease a small (9″x5″x3″) loaf pan.

Step 2
Blend together eggs, coconut oil, honey and salt.

Step 3
Combine coconut flour with baking soda and mix with liquid ingredients until there are no lumps.

Step 4
Pour into greased loaf pan and bake for 40 minutes.

Step 5
Remove from pan and cool on rack.

Banana Chocolate Chip Muffins


2 cups coconut flour
1 teaspoon baking soda
1 chopped bar of at least 70% dark chocolate


1/2 cup coconut oil
1/2 cup apple sauce
3/4 cup honey
4 large eggs
1 teaspoon vanilla extract
2 ripe bananas

Preheat oven to 350 degrees F (180 degrees C) and prepare 12 muffin cups.
In a large bowl, mix together the first 3 ingredients of the dry mixture. Stir in chocolate chips.
Cream together coconut oil, apple sauce, and honey with an electric mixer. Beat in eggs one at a time. Mash the bananas and add bananas and vanilla to the moist mixture. Add the moist mixture to the dry mixture all at once. Stir until the batter is moist but still lumpy. Fill 12 muffin cups 3/4 full of batter. Bake 30 minutes.
